Daily Specials
Every morning finds me scouring local vegetable markets, talking to farmers and fishermen and market gardeners, in order to secure supplies of the absolutely finest and freshest products available.
This enables us to change our offering of special dishes – three or four starters, and sometimes as many as six main courses – on a daily basis to enhance our printed set menu, which changes with the season.
Local producers and fishermen, many of whom I have known most of my life, are aware that I insist on using only the freshest and tastiest raw ingredients. They proudly keep me informed about the development of their crops and harvests, and even telephone me, ship-to-shore, when they are approaching the harbour with an exciting or interesting catch.
Apart from anything else, this ensures that life in our kitchen is never boring! Most importantly, it guarantees that our daily specials represent the very best that is available on the local scene.
